Ingredients
- 8 ounces angel hair pasta
- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- 1 lemon, juiced and zested
- Salt and pepper to taste
- ¼ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes, stirring occasionally, until the shrimp turn pink and opaque.
- Add the asparagus to the skillet and cook for an additional 3-4 minutes until tender but still crisp.
- Stir in the cooked pasta, reserved pasta water, lemon juice, and lemon zest. Toss everything together until well combined and heated through.
- Remove from heat and sprinkle with grated Parmesan cheese. Garnish with fresh parsley before serving.
Notes
- For a creamier sauce, add ¼ cup of heavy cream or a splash of white wine after adding the pasta.
- You can substitute the asparagus with broccoli or snap peas for a different flavor and texture.
