Description

A delightful and fresh dish featuring angel hair pasta, shrimp, and asparagus, perfect for a quick and healthy meal.

Ingredients

  • 8 ounces angel hair pasta
  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes, stirring occasionally, until the shrimp turn pink and opaque.
  4. Add the asparagus to the skillet and cook for an additional 3-4 minutes until tender but still crisp.
  5. Stir in the cooked pasta, reserved pasta water, lemon juice, and lemon zest. Toss everything together until well combined and heated through.
  6. Remove from heat and sprinkle with grated Parmesan cheese. Garnish with fresh parsley before serving.

Notes

  • For a creamier sauce, add ¼ cup of heavy cream or a splash of white wine after adding the pasta.
  • You can substitute the asparagus with broccoli or snap peas for a different flavor and texture.
