Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups bok choy, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the chopped bok choy and stir-fry for about 2-3 minutes until it begins to wilt.
  5. Return the shrimp to the skillet and add the soy sauce, oyster sauce, and sesame oil. Stir to combine.
  6. Pour in the cornstarch mixture and cook for an additional 1-2 minutes until the sauce thickens. Season with salt and pepper to taste.
  7. Remove from heat and garnish with sliced green onions before serving.
