Ingredients
- 8 ounces large shrimp, peeled and deveined
- 4 slices of sourdough bread
- 4 ounces sharp cheddar cheese, shredded
- 2 ounces mozzarella cheese, shredded
- 2 tablespoons butter, softened
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper. Let it marinate for about 15 minutes.
- Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.
- Preheat another skillet or griddle over medium heat. Spread butter on one side of each slice of sourdough bread.
- Place two slices of bread, buttered side down, in the skillet. Layer half of the cheddar and mozzarella cheeses on top of the bread.
- Add the cooked shrimp evenly over the cheese, then top with the remaining cheese and the other two slices of bread, buttered side up.
- Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip the sandwiches and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from the skillet, slice in half, and garnish with chopped parsley before serving.
Notes
- For a spicy kick, add a few dashes of hot sauce to the shrimp marinade.
- Substitute the shrimp with cooked chicken or turkey for a different protein option.
