Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/2 teaspoon cumin
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a large pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cooked shrimp, olive oil, garlic powder, salt, and pepper. Toss to coat the shrimp evenly.
  3. Add the diced avocado, cherry tomatoes, red onion, and cilantro to the bowl with the shrimp.
  4. In a small bowl, whisk together the lime juice, cumin, and red pepper flakes (if using). Pour the dressing over the shrimp and vegetable mixture.
  5. Gently toss everything together until well combined. Adjust seasoning with more salt and pepper if needed.
  6. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
