Description
A refreshing shrimp salad featuring avocado and lime, perfect for a light meal or appetizer.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1/2 teaspoon cumin
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- In a large pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process.
- In a large mixing bowl, combine the cooked shrimp, olive oil, garlic powder, salt, and pepper. Toss to coat the shrimp evenly.
- Add the diced avocado, cherry tomatoes, red onion, and cilantro to the bowl with the shrimp.
- In a small bowl, whisk together the lime juice, cumin, and red pepper flakes (if using). Pour the dressing over the shrimp and vegetable mixture.
- Gently toss everything together until well combined. Adjust seasoning with more salt and pepper if needed.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
Notes
- For added crunch, mix in some diced cucumber or bell pepper.
- Substitute shrimp with cooked chicken or canned tuna for a different protein option.
