Description

A quick and tasty Skillet Reuben recipe featuring ground beef, sauerkraut, and Swiss cheese served on lettuce leaves.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 large lettuce leaves (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the sauerkraut, garlic powder, onion powder, salt, and pepper. Cook for an additional 2-3 minutes until heated through.
  4. Sprinkle the shredded Swiss cheese over the beef mixture. Cover the skillet and let it cook for 2-3 minutes, or until the cheese is melted.
  5. In a small bowl, mix together the mayonnaise and Dijon mustard.
  6. To serve, place a generous scoop of the beef mixture onto a lettuce leaf and drizzle with the mayonnaise-Dijon sauce.

Notes

  • For a spicier kick, add a few dashes of hot sauce to the beef mixture.
  • Substitute the ground beef with ground turkey or chicken for a leaner option.
