Ingredients
- 1 pound Italian sausage (sweet or spicy, casings removed)
- 2 medium zucchinis, sliced into half-moons
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil or parsley for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Add the diced onion and red bell pepper to the skillet. Sauté for 3-4 minutes until the vegetables are softened.
- Stir in the garlic, Italian seasoning, and red pepper flakes (if using). Cook for an additional minute until fragrant.
- Add the sliced zucchini to the skillet. Season with salt and pepper. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender but still crisp.
- If desired, sprinkle the grated Parmesan cheese over the top and allow it to melt slightly before serving.
- Garnish with fresh basil or parsley if desired and serve hot.
