Description

A delicious and easy-to-make skillet dish featuring Italian sausage and fresh zucchini, perfect for a quick dinner.

Ingredients

  • 1 pound Italian sausage (sweet or spicy, casings removed)
  • 2 medium zucchinis, sliced into half-moons
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Add the diced onion and red bell pepper to the skillet. Sauté for 3-4 minutes until the vegetables are softened.
  3. Stir in the garlic, Italian seasoning, and red pepper flakes (if using). Cook for an additional minute until fragrant.
  4. Add the sliced zucchini to the skillet. Season with salt and pepper. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender but still crisp.
  5. If desired, sprinkle the grated Parmesan cheese over the top and allow it to melt slightly before serving.
  6. Garnish with fresh basil or parsley if desired and serve hot.

Notes

  • For a low-carb option, substitute the sausage with turkey or chicken sausage.
  • Add other vegetables like cherry tomatoes or spinach for extra flavor and nutrition.
