Ingredients
- 2 medium zucchinis, sliced into half-moons
- 8 ounces mushrooms, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until they are browned and have released their moisture.
- Add the sliced zucchini to the skillet and cook for another 5-7 minutes, stirring frequently, until the zucchini is tender but still slightly crisp.
- Stir in the minced garlic, oregano, salt, black pepper, and red pepper flakes (if using). Cook for an additional 1-2 minutes until the garlic is fragrant.
- If desired, sprinkle the grated Parmesan cheese over the top and let it melt for a minute before serving.
- Garnish with fresh parsley before serving.
