  • 2 medium zucchinis, sliced into half-moons
  • 8 ounces mushrooms, sliced

  • 3 cloves garlic, minced

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until they are browned and have released their moisture.
  3. Add the sliced zucchini to the skillet and cook for another 5-7 minutes, stirring frequently, until the zucchini is tender but still slightly crisp.
  4. Stir in the minced garlic, oregano, salt, black pepper, and red pepper flakes (if using). Cook for an additional 1-2 minutes until the garlic is fragrant.
  5. If desired, sprinkle the grated Parmesan cheese over the top and let it melt for a minute before serving.
