Ingredients
For the Pasta & Broccoli:
- 8–10 ounces pasta (any shape)
- 2 cups broccoli florets
For the Chicken:
- 2 medium chicken breasts (pounded flat or halved)
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon pepper
For the Creamy Alfredo Sauce:
- 1 tablespoon olive oil (or butter)
- ½ onion, minced
- 5–6 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 1 cup chicken stock (or water)
- 1 cup whole milk
- 2 ounces cream cheese
- ½ cup freshly grated Parmesan cheese
- Salt & pepper to taste
Instructions
- Cook the Pasta & Broccoli – Boil salted water and cook pasta al dente according to package directions. In the last minute of cooking, add broccoli florets. Drain and set aside.
- Prepare the Chicken – Heat a large pan over medium heat and add olive oil. Season chicken with garlic powder, paprika, Italian seasoning, salt, and pepper. Cook for 5-6 minutes per side until fully cooked. Remove from pan, let cool for 5 minutes, then slice or dice.
- Make the Alfredo Sauce – In the same pan, add olive oil and sauté onion for 3-5 minutes. Add minced garlic and cook for 30 seconds until golden. Whisk in flour and cook for another 30 seconds. Slowly whisk in chicken stock and milk, stirring constantly until smooth. Bring to a simmer, then add cream cheese and Parmesan, whisking until fully melted. Season with salt and pepper to taste.
- Combine & Serve – Toss cooked pasta and broccoli into the sauce, coating evenly. Top with sliced chicken or mix it in. Garnish with more Parmesan or fresh parsley if desired. Serve warm and enjoy!
