Description
A delicious one-pan meal featuring ground beef, potatoes, and a savory Sloppy Joe sauce topped with melted cheddar cheese.
Ingredients
- 2 tablespoons olive oil
- 1 pound ground beef (or ground turkey)
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 cup ketchup
- 1 teaspoon mustard
- 1 teaspoon brown sugar
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 medium potatoes, diced (about 4 cups)
- 1 cup shredded cheddar cheese
- 2 green onions, sliced (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat if necessary.
- Add the diced onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the Worcestershire sauce, ketchup, mustard, brown sugar, chili powder, salt, and black pepper. Mix well and let it simmer for about 5 minutes.
- While the mixture simmers, in a separate pot, boil the diced potatoes in salted water until fork-tender, about 10-12 minutes. Drain and set aside.
- Once the meat mixture has thickened slightly, gently fold in the cooked potatoes until well combined.
- Sprinkle the shredded cheddar cheese over the top and cover the skillet. Let it cook for another 2-3 minutes until the cheese is melted.
- Remove from heat and garnish with sliced green onions before serving.

- For a vegetarian version, substitute the ground beef with lentils or a plant-based meat alternative.
- Add a splash of hot sauce for extra heat or top with pickles for a tangy crunch.
