Description

This Slow Cooker Chicken and Stuffing is the ultimate one-pot comfort meal. Juicy chicken slow-cooked with savory stuffing, creamy soup, and hearty vegetables makes for a warm, satisfying dinner with minimal effort. It’s cozy, flavorful, and made for family nights, potlucks, or holiday-style meals without the hassle.

Ingredients

2 pounds boneless, skinless chicken breasts or thighs
1 package dry stuffing mix
1 can (10.5 oz) condensed cream of chicken soup
1 cup chicken broth
½ cup melted butter
½ cup chopped onion
½ cup chopped celery
½ cup chopped carrots
Salt and pepper, to taste
Optional herbs and spices: thyme, sage, garlic powder, parsley

Instructions

  • Prepare the Base:
Grease or spray the inside of your slow cooker to prevent sticking.

  • Layer the Ingredients:
Place chicken breasts or thighs on the bottom of the slow cooker. Top with chopped onions, celery, and carrots. Season with salt, pepper, and any desired herbs or spices.

  • Create the Creamy Sauce:
In a separate bowl, mix together the cream of chicken soup and chicken broth. Pour this mixture over the chicken and vegetables.

  • Add the Stuffing:
Prepare the stuffing mix according to package directions (or use hot water as needed if specified). Spoon the stuffing over the chicken and veggie mixture in an even layer.

  • Add Richness:
Drizzle melted butter over the top of the stuffing for added moisture and flavor.

  • Cook to Perfection:
Cover and cook on low for 4–6 hours or high for 2–3 hours, until the chicken is fully cooked and tender, and the stuffing is cooked through and slightly golden.

  • Serve and Enjoy:
Serve warm as-is, or pair with green beans, a side salad, mashed potatoes, or gravy for an extra homey touch.

Notes

  • You can use chicken thighs for extra moisture or chicken breasts for a leaner option.

  • For a twist, try adding chopped mushrooms, spinach, or bell peppers.

  • Leftovers reheat well and make a great next-day lunch.

  • To make this dish less salty, opt for low-sodium soup and broth.
