Description

A delicious and healthy Smoky BBQ Zucchini Casserole that combines fresh vegetables with smoky flavors and cheesy goodness.


Ingredients

  • 2 medium zucchinis, sliced into thin rounds
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 cup BBQ sauce (your favorite brand)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup breadcrumbs (optional, for topping)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or a little olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Stir in the sliced zucchini, corn, black beans, smoked paprika, cumin, salt, and black pepper. Cook for about 5-7 minutes until the zucchini is slightly tender.
  5. Remove the skillet from heat and mix in 3/4 cup of the BBQ sauce and 1/2 cup of the shredded cheddar cheese.
  6. Pour the zucchini mixture into the prepared baking dish and spread it evenly. Top with the remaining BBQ sauce, the rest of the cheddar cheese, and breadcrumbs if using.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  8. Remove from the oven and let it cool for about 5 minutes before serving. Garnish with fresh cilantro if desired.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the zucchini mixture.
