A delicious and healthy Smoky BBQ Zucchini Casserole that combines fresh vegetables with smoky flavors and cheesy goodness.
Ingredients
- 2 medium zucchinis, sliced into thin rounds
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup cooked black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 1 cup BBQ sauce (your favorite brand)
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup breadcrumbs (optional, for topping)
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or a little olive oil.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the sliced zucchini, corn, black beans, smoked paprika, cumin, salt, and black pepper. Cook for about 5-7 minutes until the zucchini is slightly tender.
- Remove the skillet from heat and mix in 3/4 cup of the BBQ sauce and 1/2 cup of the shredded cheddar cheese.
- Pour the zucchini mixture into the prepared baking dish and spread it evenly. Top with the remaining BBQ sauce, the rest of the cheddar cheese, and breadcrumbs if using.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
- Remove from the oven and let it cool for about 5 minutes before serving. Garnish with fresh cilantro if desired.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the zucchini mixture.
- Substitute the black beans with cooked ground turkey or beef for a heartier version.
