Description
A unique twist on traditional meatloaf, these Smoky Bourbon BBQ Meatloaf Cupcakes are flavorful and fun to serve.
Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup milk
- 1 large egg
- 2 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup barbecue sauce
- 1/4 cup bourbon (optional)
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 350°F. Line a muffin tin with cupcake liners or spray with non-stick cooking spray.
- In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, onion, bell pepper, milk, egg, Worcestershire sauce, garlic powder, smoked paprika, salt, and black pepper. Mix until just combined; do not overmix.
- Scoop the meat mixture into the prepared muffin tin, filling each cup about 3/4 full.
- In a small bowl, mix together the barbecue sauce and bourbon (if using). Spoon a tablespoon of the sauce mixture over each meatloaf cupcake.
- Bake in the preheated oven for 20-25 minutes, or until the meatloaf cupcakes are cooked through and reach an internal temperature of 160°F.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add 1/2 teaspoon of cayenne pepper to the meat mixture.
- You can also substitute ground turkey or chicken for a leaner option.
- Serve with a side of coleslaw or a green salad for a complete meal.
