Description

A flavorful one-pan meal featuring smoky sausage, rice, and vegetables, perfect for a quick dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup frozen peas
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
  2. In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute.
  3. Stir in the rice, chicken broth, diced tomatoes (with their juice), paprika, oregano, salt, and pepper. Bring to a boil.
  4. Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Stir in the cooked sausage and frozen peas. Cover and cook for another 5 minutes until the peas are heated through.
  6. Remove from heat and let it sit for a few minutes before serving. Garnish with chopped parsley.

Notes

  • For a spicier kick, add a pinch of red pepper flakes or diced jalapeños when cooking the onions and peppers.
  • You can substitute the smoked sausage with chicken or turkey sausage for a lighter option.
