Description
A delicious S’Mores Cheesecake that combines the flavors of chocolate, marshmallows, and graham crackers in a creamy dessert.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 ounces cream cheese, softened
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup sour cream
- ½ cup mini marshmallows
- ½ cup semi-sweet chocolate chips
- 1 cup mini marshmallows (for topping)
- ½ cup semi-sweet chocolate chips (for topping)
- 1 tablespoon unsalted butter (for topping)
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add the sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing on low speed until just combined.
- Stir in the sour cream, mini marshmallows, and chocolate chips.
- Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until the center is set but slightly jiggly.
- Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Refrigerate for at least 4 hours, or overnight, to set completely.
- For the topping, in a small saucepan over low heat, melt the butter and chocolate chips together, stirring until smooth.
- Remove from heat and stir in the mini marshmallows. Spread the mixture evenly over the chilled cheesecake.
- To serve, slice the cheesecake and enjoy. For an extra touch, use a kitchen torch to lightly toast the marshmallow topping before serving.
Notes
- For a richer chocolate flavor, add an additional ¼ cup of chocolate chips to the filling.
- To make it more festive, drizzle melted chocolate over the top before serving or sprinkle crushed graham crackers for added texture.
