Description

A delicious S’Mores Cheesecake that combines the flavors of chocolate, marshmallows, and graham crackers in a creamy dessert.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup sour cream
  • ½ cup mini marshmallows
  • ½ cup semi-sweet chocolate chips
  • 1 cup mini marshmallows (for topping)
  • ½ cup semi-sweet chocolate chips (for topping)
  • 1 tablespoon unsalted butter (for topping)

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  5. Gradually add the sugar and vanilla extract, mixing until well combined.
  6. Add the eggs one at a time, mixing on low speed until just combined.
  7. Stir in the sour cream, mini marshmallows, and chocolate chips.
  8. Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
  9. Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  10. Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour.
  11. Remove the cheesecake from the oven and let it cool to room temperature.
  12. Refrigerate for at least 4 hours, or overnight, to set completely.
  13. For the topping, in a small saucepan over low heat, melt the butter and chocolate chips together, stirring until smooth.
  14. Remove from heat and stir in the mini marshmallows. Spread the mixture evenly over the chilled cheesecake.
  15. To serve, slice the cheesecake and enjoy. For an extra touch, use a kitchen torch to lightly toast the marshmallow topping before serving.

Notes

  • For a richer chocolate flavor, add an additional ¼ cup of chocolate chips to the filling.
  • To make it more festive, drizzle melted chocolate over the top before serving or sprinkle crushed graham crackers for added texture.
