Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1 cup diced onions
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for about 4-5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside. In the same skillet, add the sliced mushrooms and diced onions. Sauté for about 5-7 minutes until the onions are translucent and the mushrooms are tender.
  5. Return the chicken to the skillet, placing it on top of the sautéed vegetables. Sprinkle the cooked bacon evenly over the chicken, then top with shredded cheddar cheese.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  7. Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
