A delicious recipe for Smothered Chicken Texas Roadhouse Style, featuring tender chicken breasts topped with sautéed mushrooms, onions, crispy bacon, and melted cheddar cheese.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 pound total)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup sliced mushrooms
- 1 cup diced onions
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper on both sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for about 4-5 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add the sliced mushrooms and diced onions. Sauté for about 5-7 minutes until the onions are translucent and the mushrooms are tender.
- Return the chicken to the skillet, placing it on top of the sautéed vegetables. Sprinkle the cooked bacon evenly over the chicken, then top with shredded cheddar cheese.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add sliced jalapeños on top of the chicken before baking.
- To make it a complete meal, serve with a side of steamed broccoli or a fresh garden salad.
