Ingredients

For the Sauce:

  • 3 tbsp gluten-free soy sauce
  • 2 tbsp rice wine vinegar
  • 2 tbsp sesame oil
  • 1 tsp toasted sesame seeds
  • 2 tsp honey or maple syrup
  • 1 tsp fish sauce (optional)
  • ¼ tsp red pepper flakes

For the Noodles and Stir Fry:

  • 8 oz soba noodles (100% buckwheat)
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 medium carrot, julienned
  • 1 medium yellow/brown onion, sliced
  • 1314 oz white button mushrooms, sliced
  • 23 tbsp soba noodle cooking water

Vegetable oil (as needed)


Instructions

  1. Prepare the Sauce:
    • Mix soy sauce, rice wine vinegar, sesame oil, sesame seeds, honey/maple syrup, fish sauce (if using), and red pepper flakes in a bowl. Set aside.
  2. Cook the Noodles:
    • Boil soba noodles in salted water as per package instructions (usually ~5 minutes).
    • Drain, rinse with cold water, toss with a bit of oil, and set aside.
  3. Stir-Fry the Vegetables:
    • Heat vegetable oil in a wok or large skillet over high heat.
    • Cook onion for 2–3 minutes until softened. Add garlic and ginger; stir for 30 seconds.
    • Add mushrooms and stir-fry for 3–4 minutes until golden. Toss in carrots and cook for 2 minutes.
  4. Combine Noodles and Sauce:
    • Reduce heat to medium. Add cooked noodles to the skillet.
    • Pour sauce over the noodles and vegetables. Toss well to coat.
    • Add 2–3 tbsp of reserved cooking water to thin the sauce if needed. Stir-fry for 2 more minutes.
  5. Serve and Garnish:
    • Transfer to a serving dish. Garnish with sesame seeds, chopped scallions, or fresh chili slices.

Notes

  • Protein Options: Add cooked shrimp, chicken, tofu, or beef for a heartier dish.
  • Vegetarian/Vegan: Use maple syrup and skip fish sauce.
