A quick and healthy Asian-inspired dish featuring buckwheat soba noodles, vibrant vegetables, and a savory-sweet sauce. Perfect for weeknight dinners or when you’re craving a wholesome, flavorful meal.
Ingredients
For the Sauce:
- 3 tbsp gluten-free soy sauce
- 2 tbsp rice wine vinegar
- 2 tbsp sesame oil
- 1 tsp toasted sesame seeds
- 2 tsp honey or maple syrup
- 1 tsp fish sauce (optional)
- ¼ tsp red pepper flakes
For the Noodles and Stir Fry:
- 8 oz soba noodles (100% buckwheat)
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 medium carrot, julienned
- 1 medium yellow/brown onion, sliced
- 13–14 oz white button mushrooms, sliced
- 2–3 tbsp soba noodle cooking water
Vegetable oil (as needed)
Instructions
- Prepare the Sauce:
- Mix soy sauce, rice wine vinegar, sesame oil, sesame seeds, honey/maple syrup, fish sauce (if using), and red pepper flakes in a bowl. Set aside.
- Cook the Noodles:
- Boil soba noodles in salted water as per package instructions (usually ~5 minutes).
- Drain, rinse with cold water, toss with a bit of oil, and set aside.
- Stir-Fry the Vegetables:
- Heat vegetable oil in a wok or large skillet over high heat.
- Cook onion for 2–3 minutes until softened. Add garlic and ginger; stir for 30 seconds.
- Add mushrooms and stir-fry for 3–4 minutes until golden. Toss in carrots and cook for 2 minutes.
- Combine Noodles and Sauce:
- Reduce heat to medium. Add cooked noodles to the skillet.
- Pour sauce over the noodles and vegetables. Toss well to coat.
- Add 2–3 tbsp of reserved cooking water to thin the sauce if needed. Stir-fry for 2 more minutes.
- Serve and Garnish:
- Transfer to a serving dish. Garnish with sesame seeds, chopped scallions, or fresh chili slices.
Notes
- Protein Options: Add cooked shrimp, chicken, tofu, or beef for a heartier dish.
- Vegetarian/Vegan: Use maple syrup and skip fish sauce.
