Description
A delightful Southern Creamy Pineapple Pecan Cake that combines the sweetness of pineapple with the crunch of pecans, topped with a rich cream cheese frosting.
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup crushed pineapple, drained
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 8 ounces cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk (more if needed for consistency)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.
- Add the softened butter, eggs, crushed pineapple, and vanilla extract to the dry ingredients. Beat on medium speed for about 2-3 minutes until the batter is smooth and well combined.
- Fold in the chopped pecans gently using a spatula.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
- While the cakes are cooling, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and mix until well blended. Stir in the vanilla extract and milk until you reach your desired frosting consistency.
- Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake.
- Chill the cake in the refrigerator for at least 30 minutes before serving to set the frosting.
Notes
- For added flavor, consider mixing in a teaspoon of cinnamon or nutmeg into the batter.
- You can also substitute walnuts for pecans for a different nutty flavor.
- For a tropical twist, top the cake with toasted coconut flakes before serving.
