Description

A delicious Southern dessert featuring a moist cake with coconut, pecans, and pineapple, topped with a sweet glaze.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 cup crushed pineapple, drained
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, baking powder, salt, and cinnamon. Whisk together until well blended.
  3. In another bowl, mix together the vegetable oil, eggs, vanilla extract, and buttermilk. Stir until combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the shredded coconut, chopped pecans, and crushed pineapple until evenly distributed.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the glaze by mixing the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  9. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, poke holes in the top of the cake with a fork and pour the glaze over the warm cake.
  10. Allow the cake to cool completely before serving.

Notes

  • For a chocolate twist, add 1/2 cup of unsweetened cocoa powder to the dry ingredients for a chocolate version of this cake.
  • Substitute walnuts for pecans for a different nutty flavor, or omit nuts entirely for a nut-free version.
