A delicious Southern dessert featuring a moist cake with coconut, pecans, and pineapple, topped with a sweet glaze.
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup shredded coconut
- 1 cup chopped pecans
- 1 cup crushed pineapple, drained
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, combine the flour, sugar, baking soda, baking powder, salt, and cinnamon. Whisk together until well blended.
- In another bowl, mix together the vegetable oil, eggs, vanilla extract, and buttermilk. Stir until combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the shredded coconut, chopped pecans, and crushed pineapple until evenly distributed.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the glaze by mixing the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
- Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, poke holes in the top of the cake with a fork and pour the glaze over the warm cake.
- Allow the cake to cool completely before serving.
Notes
- For a chocolate twist, add 1/2 cup of unsweetened cocoa powder to the dry ingredients for a chocolate version of this cake.
- Substitute walnuts for pecans for a different nutty flavor, or omit nuts entirely for a nut-free version.
