  • 1/2 cup bell pepper (any color), diced
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup crumbled bacon (optional)
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. In a large mixing bowl, combine the black-eyed peas, green peas, cherry tomatoes, red onion, and bell pepper.
