Ingredients
- 1 can (15 ounces) black-eyed peas, drained and rinsed
- 1 can (15 ounces) green peas, drained
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper (any color), diced
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup crumbled bacon (optional)
- 1/4 cup shredded cheddar cheese (optional)
Instructions
- In a large mixing bowl, combine the black-eyed peas, green peas, cherry tomatoes, red onion, and bell pepper.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pea mixture and gently stir until everything is well coated.
- If using, fold in the crumbled bacon and shredded cheddar cheese.
- Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld.
- Serve chilled as a side dish or light meal.
