A refreshing and vibrant Southwest Cucumber Salad perfect for summer gatherings.
Ingredients
- 2 large cucumbers, diced
- 1 cup cherry tomatoes, halved
- 1 cup corn (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the diced cucumbers, cherry tomatoes, corn, red bell pepper, red onion, and cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly.
- Add the diced avocado and carefully fold it into the salad to avoid mashing.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve cold and enjoy!
