Description

Ingredients

  • 2 large cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the diced cucumbers, cherry tomatoes, corn, red bell pepper, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly.
  4. Add the diced avocado and carefully fold it into the salad to avoid mashing.
