Description
A savory and healthy Spaghetti Squash Pie that combines the flavors of cheese and marinara sauce with the unique texture of spaghetti squash.
Ingredients
- 2 medium spaghetti squash (about 3 pounds total)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup marinara sauce
Instructions
- Preheat your oven to 400°F (200°C). Cut the spaghetti squashes in half lengthwise and scoop out the seeds. Brush the insides with olive oil and sprinkle with salt and pepper. Place them cut-side down on a baking sheet lined with parchment paper.
- Roast the spaghetti squash in the preheated oven for about 40-50 minutes, or until the flesh is tender and easily shredded with a fork. Remove from the oven and let cool slightly.
- Once cool enough to handle, use a fork to scrape the flesh of the squash into a large bowl, creating spaghetti-like strands.
- In a separate bowl, mix together the ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, eggs, garlic powder, onion powder, oregano, basil, and red pepper flakes (if using). Stir until well combined.
- Add the spaghetti squash strands to the cheese mixture and stir until everything is evenly coated.
- Spread half of the marinara sauce on the bottom of a 9-inch pie dish. Pour the spaghetti squash mixture over the sauce, spreading it evenly. Top with the remaining marinara sauce and sprinkle with the remaining 1/2 cup of mozzarella cheese.
- Bake in the oven for 25-30 minutes, or until the cheese is bubbly and golden. Let it cool for about 10 minutes before slicing.
Notes
- For a meatier version, add cooked ground turkey or sausage to the cheese mixture before baking.
- Experiment with different cheeses like feta or goat cheese for a unique flavor twist.
