Description

A savory and healthy Spaghetti Squash Pie that combines the flavors of cheese and marinara sauce with the unique texture of spaghetti squash.


Ingredients

  • 2 medium spaghetti squash (about 3 pounds total)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup marinara sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the spaghetti squashes in half lengthwise and scoop out the seeds. Brush the insides with olive oil and sprinkle with salt and pepper. Place them cut-side down on a baking sheet lined with parchment paper.
  2. Roast the spaghetti squash in the preheated oven for about 40-50 minutes, or until the flesh is tender and easily shredded with a fork. Remove from the oven and let cool slightly.
  3. Once cool enough to handle, use a fork to scrape the flesh of the squash into a large bowl, creating spaghetti-like strands.
  4. In a separate bowl, mix together the ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, eggs, garlic powder, onion powder, oregano, basil, and red pepper flakes (if using). Stir until well combined.
  5. Add the spaghetti squash strands to the cheese mixture and stir until everything is evenly coated.
  6. Spread half of the marinara sauce on the bottom of a 9-inch pie dish. Pour the spaghetti squash mixture over the sauce, spreading it evenly. Top with the remaining marinara sauce and sprinkle with the remaining 1/2 cup of mozzarella cheese.
  7. Bake in the oven for 25-30 minutes, or until the cheese is bubbly and golden. Let it cool for about 10 minutes before slicing.

Notes

  • For a meatier version, add cooked ground turkey or sausage to the cheese mixture before baking.
