Description

A delicious and healthy twist on traditional pizza using spaghetti squash as the base.


Ingredients

  • 3 cups cooked spaghetti squash (about 1 medium squash)
  • 1 pound ground turkey or beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 jar (24 ounces) marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sliced pepperoni (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place cut-side down on a baking sheet and roast for 30-40 minutes, or until tender. Allow to cool slightly, then scrape the flesh with a fork to create spaghetti-like strands.
  3. In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  4. Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.
  5. Stir in the oregano, basil, red pepper flakes, salt, and pepper. Cook for another minute.
  6. Add the cooked spaghetti squash and marinara sauce to the skillet, mixing well to combine all ingredients.
  7. Transfer the mixture to a greased 9×13-inch baking dish. Top with shredded mozzarella cheese, grated Parmesan cheese, and pepperoni slices if using.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired before serving.

  • For a vegetarian option, substitute the meat with sautéed mushrooms, bell peppers, and zucchini.
