Description

This Speckled Egg Cake is a breathtaking Easter centerpiece that’s as delicious as it is beautiful! With fluffy vanilla cake layers, smooth blue buttercream frosting, and a signature cocoa speckled effect, this cake captures the magic of spring. Topped with chocolate eggs, it’s the ultimate festive treat for your Easter table!

Ingredients

For the vanilla cake: Cake flour, salt, baking powder, egg whites, butter, sugar, vanilla extract, milk, full-fat sour cream.

For the buttercream frosting: Butter, shortening (Crisco), powdered sugar, milk, vanilla extract, blue food coloring (Americolor SkyBlue recommended).

For the speckled effect: Cocoa powder, vanilla extract (or vodka), food-safe brush.

For the decorations: Chocolate eggs (Mini Cadbury Eggs, M&M’s speckled eggs, or Whopper Robin Eggs).

Instructions

  1. Bake the Cake Layers:

    • Preheat oven to 340°F (170°C). Grease and line three 6-inch cake pans.
    • Sift dry ingredients together in a bowl. In a separate bowl, mix milk, sour cream, and vanilla.
    • Cream butter and sugar until fluffy, then add egg whites one at a time.
    • Alternate adding dry ingredients and milk mixture, mixing until combined.
    • Divide batter evenly into pans and bake for 25-30 minutes, until a toothpick comes out clean.
    • Let cakes cool completely before frosting.
  2. Prepare the Buttercream Frosting:

    • Beat butter and shortening until smooth and creamy.
    • Gradually add powdered sugar, alternating with milk, until fully incorporated.
    • Mix in vanilla extract and blue food coloring until the desired shade is achieved.
  3. Assemble & Frost the Cake:

    • Stack cake layers, spreading buttercream between each.
    • Apply a thin crumb coat and chill for 15 minutes.
    • Frost the cake smoothly using a bench scraper.
  4. Create the Speckled Effect:

    • Mix cocoa powder with vanilla extract or vodka to form a thin paste.
    • Dip a food-safe brush into the mixture and flick speckles onto the cake for a realistic egg effect.
  5. Decorate with Chocolate Eggs:

    • Arrange chocolate eggs around the base of the cake.
    • Pipe buttercream on top and place additional eggs to create a nest-like design.

Notes

  • Chilling Tip: Refrigerate the cake for 30 minutes before speckling to prevent drips.
  • Alternative Colors: Swap blue for pastel pink, lavender, or yellow for a unique twist.
  • Storage: Keep refrigerated for up to 3 days, bring to room temperature before serving.
