Ingredients

  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 12 jalapenos, finely chopped (adjust based on heat preference)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, grated carrots, and corn kernels. Toss well to mix the vegetables evenly.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, chopped jalapenos, garlic powder, onion powder, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss until all the vegetables are well coated.
