Description
A zesty and refreshing side dish featuring a blend of crunchy vegetables and a spicy jalapeno dressing.
Ingredients
- 2 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 cup carrots, grated
- 1 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1–2 jalapenos, finely chopped (adjust based on heat preference)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- In a large mixing bowl, combine the green cabbage, red cabbage, grated carrots, and corn kernels. Toss well to mix the vegetables evenly.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, chopped jalapenos, garlic powder, onion powder, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture and toss until all the vegetables are well coated.
- If using, fold in the chopped cilantro for added flavor.
- Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld and the coleslaw to chill.
- Serve cold as a side dish or topping for tacos, burgers, or sandwiches.
Notes
- For a creamier texture, add an extra tablespoon of mayonnaise.
- To make it a bit sweeter, increase the honey to 2 tablespoons or add diced apples for a fruity twist.
