Ingredients
- 2 large cucumbers, thinly sliced (or spiralized)

- 1 small red chili or 1/4 teaspoon chili flakes (adjust to taste)
- 3 tablespoons creamy peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar (or lime juice)
- 1 teaspoon honey (or maple syrup)
- 1 teaspoon sesame oil
- 1–2 teaspoons sriracha or chili paste (adjust for spice level)
- 2–3 tablespoons warm water (to thin the dressing)
- 1 small garlic clove, minced
Instructions
- In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha, and garlic.
- Add warm water gradually until you reach a smooth, pourable consistency.
- Place the cucumber slices, onion, and cilantro in a large bowl.
- Pour the spicy peanut dressing over the vegetables.
- Toss gently until everything is evenly coated.
- Sprinkle with chopped peanuts and red chili flakes (if using).
- Serve immediately for a crunchy salad, or chill for 15–20 minutes to let the flavors blend.
