Description

A refreshing and flavorful salad featuring cucumbers and a spicy peanut dressing.

Ingredients

  • 2 large cucumbers, thinly sliced (or spiralized)
  • 1/4 cup red onion, thinly sliced (optional)
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons roasted peanuts, roughly chopped
  • 1 small red chili or 1/4 teaspoon chili flakes (adjust to taste)
  • 3 tablespoons creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar (or lime juice)
  • 1 teaspoon honey (or maple syrup)
  • 1 teaspoon sesame oil
  • 12 teaspoons sriracha or chili paste (adjust for spice level)
  • 23 tablespoons warm water (to thin the dressing)
  • 1 small garlic clove, minced

Instructions

  1. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha, and garlic.
  2. Add warm water gradually until you reach a smooth, pourable consistency.
  3. Place the cucumber slices, onion, and cilantro in a large bowl.
  4. Pour the spicy peanut dressing over the vegetables.
  5. Toss gently until everything is evenly coated.
  6. Sprinkle with chopped peanuts and red chili flakes (if using).
  7. Serve immediately for a crunchy salad, or chill for 15–20 minutes to let the flavors blend.

Notes

  • Adjust the spice level by varying the amount of chili or sriracha.
  • Chilling the salad enhances the flavors.
