Description

Delicious and crispy bites made with sushi rice and topped with a spicy tuna mixture, perfect for a flavorful appetizer.


Ingredients

  • 1 cup sushi rice
  • 1 ¼ cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 1 pound sushi-grade tuna, diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 avocado, sliced
  • 2 green onions, chopped
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • Soy sauce, for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender. Remove from heat and let it sit, covered, for 10 minutes.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool to room temperature.
  4. In another bowl, combine the diced tuna, mayonnaise, sriracha, soy sauce, and sesame oil. Mix well and set aside.
  5. Once the rice has cooled, wet your hands and take a small amount of rice (about 2 tablespoons) to form a compact rectangular shape. Repeat until all the rice is shaped.
  6. Heat about ½ inch of vegetable oil in a frying pan over medium heat. Dredge each rice piece in panko breadcrumbs, then fry until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.
  7. Top each crispy rice piece with a spoonful of the spicy tuna mixture, a slice of avocado, and a sprinkle of chopped green onions. Serve with soy sauce for dipping.

Notes

  • For a lighter version, use brown rice instead of sushi rice.
  • You can also substitute the tuna with cooked shrimp or crab for a different flavor.
