Description

Ingredients

  • 2 (10-ounce) packages frozen chopped spinach, thawed and drained
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon paprika
  • 1/4 teaspoon nutmeg
  • 1/4 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the drained spinach, cottage cheese, sour cream, cheddar cheese, mozzarella cheese, Parmesan cheese, onion, bell pepper, garlic, salt, black pepper, red pepper flakes, paprika, and nutmeg. Mix well until all ingredients are thoroughly combined.
  3. Transfer the mixture to a greased 9×13-inch baking dish, spreading it evenly.
  4. If using breadcrumbs, sprinkle them evenly over the top of the casserole for added crunch.
  5. Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is lightly golden.
  6. Remove from the oven and let it cool for about 5 minutes before serving.
