Rich, creamy, and packed with flavor, this Creamy Spinach Artichoke Chicken Bake is a comforting dish that brings together tender chicken, savory artichokes, and a luscious cheesy sauce. It’s an easy, protein-packed meal that’s perfect for busy weeknights or meal prep!


Ingredients

2 large chicken breasts (boneless, skinless), ½ cup cottage cheese, ¼ cup fresh spinach (chopped), ½ cup artichoke hearts (drained and chopped), 2 cloves garlic (minced), ¼ cup grated parmesan cheese, ¼ cup olive oil, salt and pepper (to taste).


Instructions

  1. Preheat & Prep – Preheat the oven to 400°F (200°C). Cut the chicken breasts into 1-inch pieces and place them in a mixing bowl.

  2. Mix the Ingredients – Add cottage cheese, chopped spinach, artichoke hearts, minced garlic, and parmesan cheese to the bowl. Stir until everything is well combined.

  3. Prepare the Baking Dish – Coat the bottom of a 9×13-inch baking pan with olive oil. Evenly spread the chicken mixture into the pan.

  4. Bake – Place the dish in the oven and bake uncovered for 25-30 minutes or until the chicken is fully cooked and the top is slightly golden.

  5. Serve & Enjoy – Remove from the oven and serve hot. Garnish with fresh spinach or an extra sprinkle of parmesan for added flavor.

Notes

  • For extra creaminess, mix in ¼ cup of cream cheese before baking.
