A delicious and creamy Spinach Artichoke Stuffed Chicken recipe that is perfect for a hearty meal.
Ingredients
- 2 large boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1 cup canned artichoke hearts, drained and chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- In a medium bowl, combine the chopped spinach, artichoke hearts, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, salt, and black pepper. Mix until well combined.
- Carefully cut a pocket into each chicken breast by slicing horizontally, making sure not to cut all the way through.
- Stuff each chicken breast with the spinach artichoke mixture, using toothpicks to secure the opening if necessary.
- Heat olive oil in an oven-safe skillet over medium heat. Add the stuffed chicken breasts and sear for about 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
- For added flavor, consider adding a pinch of red pepper flakes to the stuffing for a bit of heat.
- You can also substitute the spinach with kale or add sun-dried tomatoes for a different twist.
