Ingredients
- 3 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder (optional)
- Fresh herbs for garnish (optional)
Instructions
- In a mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined and slightly frothy.
- Heat the olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sauté for 1-2 minutes until wilted.
- Pour the egg mixture over the spinach in the skillet. Cook for about 3-4 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.
- Once the eggs are mostly set but still slightly runny on top, sprinkle the shredded cheese evenly over the omelette.
- Carefully roll the omelette from one end to the other using the spatula, creating a log shape. Cook for an additional minute to melt the cheese.
- Slide the omelette roll onto a plate and let it cool for a minute before slicing into pieces. Garnish with fresh herbs if desired.

- For added flavor, mix in diced tomatoes or bell peppers with the spinach.
- Substitute the cheese with feta or goat cheese for a different taste profile.
