Description

A delicious and nutritious Spinach and Cheese Egg Omelette Roll, perfect for breakfast or a light meal.

Ingredients

  • 3 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined and slightly frothy.
  2. Heat the olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sauté for 1-2 minutes until wilted.
  3. Pour the egg mixture over the spinach in the skillet. Cook for about 3-4 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.
  4. Once the eggs are mostly set but still slightly runny on top, sprinkle the shredded cheese evenly over the omelette.
  5. Carefully roll the omelette from one end to the other using the spatula, creating a log shape. Cook for an additional minute to melt the cheese.
  6. Slide the omelette roll onto a plate and let it cool for a minute before slicing into pieces. Garnish with fresh herbs if desired.

Notes

  • For added flavor, mix in diced tomatoes or bell peppers with the spinach.
  • Substitute the cheese with feta or goat cheese for a different taste profile.
