Delicious and healthy Spinach-Feta Muffins, perfect for breakfast or a snack.
Ingredients
- 2 cups fresh spinach, chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1/2 cup milk
- 1/4 cup olive oil
- 2 large eggs
- 1 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine the flour, baking powder, baking soda, salt, black pepper, garlic powder, and red pepper flakes. Mix well.
- In another bowl, whisk together the milk, olive oil, and eggs until well combined.
- Add the chopped spinach and crumbled feta cheese to the wet ingredients and stir gently to combine.
- Pour the wet mixture into the dry ingredients and fold until just combined. Do not overmix; a few lumps are okay.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
- Add diced sun-dried tomatoes or olives for an extra burst of flavor.
