Description

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the flour, baking powder, baking soda, salt, black pepper, garlic powder, and red pepper flakes. Mix well.
  3. In another bowl, whisk together the milk, olive oil, and eggs until well combined.
  4. Add the chopped spinach and crumbled feta cheese to the wet ingredients and stir gently to combine.
  5. Pour the wet mixture into the dry ingredients and fold until just combined. Do not overmix; a few lumps are okay.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
