  • 1 medium onion, diced
  • 1 (10-ounce) package frozen chopped spinach, thawed and well-drained
  • 4 large eggs
  • 1 cup milk
  • ¾ cup crumbled feta cheese
  • Salt and black pepper, to taste
  • ¼ teaspoon nutmeg (optional)
  • 1 unbaked 9-inch pie crust (store-bought or homemade)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Sauté diced onion until soft and translucent (about 4–5 minutes).
  4. Add spinach and cook for 1–2 minutes to remove excess moisture.
  5. Remove from heat and let cool slightly.
  6. In a bowl, whisk eggs and milk until smooth.
  7. Season with salt, pepper, and nutmeg if using.
  8. Spread the spinach-onion mixture evenly into the pie crust.
  9. Sprinkle feta cheese on top.
  10. Pour egg mixture over the filling.
  11. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
  12. Let rest for 10 minutes before slicing.
