Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 (10-ounce) package frozen chopped spinach, thawed and well-drained
- 4 large eggs
- 1 cup milk
- ¾ cup crumbled feta cheese
- Salt and black pepper, to taste
- ¼ teaspoon nutmeg (optional)
- 1 unbaked 9-inch pie crust (store-bought or homemade)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Sauté diced onion until soft and translucent (about 4–5 minutes).
- Add spinach and cook for 1–2 minutes to remove excess moisture.
- Remove from heat and let cool slightly.
- In a bowl, whisk eggs and milk until smooth.
- Season with salt, pepper, and nutmeg if using.
- Spread the spinach-onion mixture evenly into the pie crust.
- Sprinkle feta cheese on top.
- Pour egg mixture over the filling.
- Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
- Let rest for 10 minutes before slicing.
- Serve warm or at room temperature.

- For a gluten-free option, use a gluten-free pie crust.
- Feel free to add other vegetables like bell peppers or mushrooms for extra flavor.
