Description

A delicious and easy recipe for a crustless quiche made with spinach, mushrooms, and feta cheese.


Ingredients

  • 6 large eggs
  • 1 cup whole milk
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch pie dish or quiche dish with cooking spray or a little olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 3-4 minutes until the onion is translucent.
  3. Add the sliced mushrooms to the skillet and cook for another 5 minutes, stirring occasionally, until the mushrooms are tender. Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Remove from heat and let cool slightly.
  4. In a mixing bowl, whisk together the eggs, milk, oregano, salt, and black pepper until well combined.
  5. Spread the sautéed vegetable mixture evenly in the prepared pie dish. Pour the egg mixture over the vegetables, then sprinkle the crumbled feta cheese on top.
  6. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. A knife inserted in the center should come out clean.
  7. Allow the quiche to cool for about 10 minutes before slicing and serving.

Notes

  • For a richer flavor, add a pinch of nutmeg to the egg mixture.
  • You can also substitute the feta with goat cheese or cheddar for a different taste.
  • For a heartier quiche, add cooked bacon or sausage to the vegetable mixture before pouring in the egg mixture.
