Description
A delicious and easy recipe for a crustless quiche made with spinach, mushrooms, and feta cheese.
Ingredients
- 6 large eggs
- 1 cup whole milk
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup feta cheese, crumbled
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F. Grease a 9-inch pie dish or quiche dish with cooking spray or a little olive oil.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 3-4 minutes until the onion is translucent.
- Add the sliced mushrooms to the skillet and cook for another 5 minutes, stirring occasionally, until the mushrooms are tender. Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together the eggs, milk, oregano, salt, and black pepper until well combined.
- Spread the sautéed vegetable mixture evenly in the prepared pie dish. Pour the egg mixture over the vegetables, then sprinkle the crumbled feta cheese on top.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. A knife inserted in the center should come out clean.
- Allow the quiche to cool for about 10 minutes before slicing and serving.
Notes
- For a richer flavor, add a pinch of nutmeg to the egg mixture.
- You can also substitute the feta with goat cheese or cheddar for a different taste.
- For a heartier quiche, add cooked bacon or sausage to the vegetable mixture before pouring in the egg mixture.
