Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup water
  • 2 tablespoons olive oil
  • 4 ounces feta cheese, crumbled
  • 1 cup fresh spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour, baking powder, and salt. Mix well.
  2. Gradually add the water and olive oil, stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
  3. Divide the dough into four equal pieces and roll each piece into a flat circle, about 1/4 inch thick.
  4. Heat a skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  5. In a separate bowl, combine the feta cheese, spinach, cherry tomatoes, red onion, dill, lemon juice, salt, and pepper. Mix until well combined.
  6. Spread the feta mixture evenly over each flatbread.
  7. Serve warm or at room temperature, garnished with additional dill if desired.
