Description
A delicious recipe for Spring Feta Flatbreads, perfect for a light meal or appetizer.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup water
- 2 tablespoons olive oil
- 4 ounces feta cheese, crumbled
- 1 cup fresh spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour, baking powder, and salt. Mix well.
- Gradually add the water and olive oil, stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
- Divide the dough into four equal pieces and roll each piece into a flat circle, about 1/4 inch thick.
- Heat a skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
- In a separate bowl, combine the feta cheese, spinach, cherry tomatoes, red onion, dill, lemon juice, salt, and pepper. Mix until well combined.
- Spread the feta mixture evenly over each flatbread.
- Serve warm or at room temperature, garnished with additional dill if desired.
Notes
- For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
- Add grilled chicken or chickpeas for extra protein and heartiness.
