Description

Start your day with this hearty stacked tortilla breakfast casserole, packed with layers of smoky bacon, savory sausage, diced ham, and gooey melted cheese. With a fluffy egg mixture binding it all together, this crowd-pleasing dish is perfect for brunches, meal prepping, or feeding a hungry family.

Ingredients

  • 1 pound bacon, cooked and crumbled
  • 1 pound pork sausage, cooked and crumbled
  • 1 pound diced ham
  • 10 (8-inch) tortillas, cut in half
  • 8 large eggs
  • 1 ½ cups milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon hot sauce (optional, for a mild kick)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella or Monterey Jack cheese

Instructions

Step 1: Cook the Meats

  1. In a large skillet, cook the bacon over medium heat until crispy. Crumble the bacon into small pieces and set aside.
  2. In the same skillet, cook the pork sausage until browned and fully cooked. Drain excess grease and set it aside.
  3. Add the diced ham to the skillet and cook briefly, just until warmed through.

Step 2: Prepare the Egg Mixture

  1. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and hot sauce (if using). Ensure everything is fully combined.

Step 3: Assemble the Casserole

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or butter.
  2. Cut the tortillas in half. Place a layer of halved tortillas on the bottom of the dish.
  3. Spread a third of the bacon, sausage, and ham over the tortilla layer.
  4. Sprinkle a layer of cheddar and mozzarella cheese over the meat.
  5. Repeat this layering process—tortillas, meat, cheese—until all ingredients are used, finishing with a cheese layer on top.

Step 4: Add the Egg Mixture

  1. Slowly pour the egg mixture evenly over the layered casserole. Use a spatula to press down gently, ensuring the liquid soaks into the tortillas.

Step 5: Bake

  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  2. Remove the foil and bake for an additional 10–15 minutes, or until the top is golden brown and the eggs are fully set.

Step 6: Cool and Serve

  1. Let the casserole rest for 5–10 minutes before slicing. This helps the layers hold together.
  2. Serve warm with optional toppings like salsa, sour cream, avocado slices, or fresh cilantro.

Notes

  • Make-Ahead: Assemble the casserole the night before, cover, and refrigerate. Bake fresh in the morning for a no-fuss breakfast.
  • Freezing: Cool completely, wrap tightly in foil, and freeze for up to 2 months. Reheat in the oven at 350°F until warmed through.
  • Customizations: Feel free to add vegetables like diced bell peppers, spinach, or onions for extra nutrition and flavor.
