Description

These Sticky Lemongrass Chilli Chicken Wings are bold, fragrant, and finger-licking good! Marinated in a zesty blend of lemongrass, chilli, garlic, and ginger, then crisped to perfection in the air fryer, these wings are finished with crunchy peanuts and green onions for the ultimate flavor explosion.


Ingredients

For the Marinade and Wings:
1 kilogram (2 pounds) chicken wings
1 tablespoon oil
3 tablespoons soy sauce (or tamari or coconut aminos for gluten-free)
3 tablespoons brown sugar (or honey or maple syrup as alternatives)
2 tablespoons lemon or lime juice
2 garlic cloves
2 teaspoons freshly grated ginger
1 red chilli (Thai chillies recommended)
1 stalk lemongrass, roughly chopped
Salt, to taste

 

For Garnish:
1 cup roasted peanuts, roughly chopped
1/2 cup finely chopped spring onions (green onions)
1 red chilli, finely chopped (optional)


Instructions

  1. Make the Marinade
    In a food processor, combine oil, soy sauce, brown sugar, lemon or lime juice, garlic, ginger, red chilli, and lemongrass. Blend into a smooth marinade. Add salt to taste.

  2. Marinate the Wings
    Place chicken wings in a large mixing bowl. Pour the marinade over the wings, toss to coat evenly, and cover. Refrigerate for at least 30 minutes or overnight for best flavor.

  3. Cook the Wings
    Preheat the air fryer to 200°C (390°F). Arrange the marinated wings in a single layer in the air fryer basket. Cook for 15 to 20 minutes, flipping halfway through, until golden, sticky, and fully cooked.

  4. Toast the Peanuts
    While the wings cook, toast the chopped peanuts in a dry skillet or oven at 350°F for 5 minutes, or until golden and fragrant.

  5. Serve and Garnish
    Serve the wings hot, topped with toasted peanuts, spring onions, and extra chilli if desired for an extra kick.

Notes

  • You can substitute boneless chicken thighs for wings if preferred—just adjust cooking time accordingly.

  • To make this dish nut-free, omit the peanuts or substitute with toasted sesame seeds for crunch.

  • If you don’t have an air fryer, bake at 425°F (220°C) for 25–30 minutes, flipping halfway through.
