Ingredients

  • 1 cup shelled pistachios, finely ground
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/4 cup honey

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a medium bowl, combine the ground pistachios, flour, baking powder, and salt. Mix well and set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top. Drizzle the honey evenly over the batter.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the pudding to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Serve warm or at room temperature, optionally drizzled with extra honey or topped with whipped cream.
