Description

Sticky Tahini Butter Sweet Potatoes are a delicious and healthy treat, combining the natural sweetness of sweet potatoes with a creamy tahini sauce.


Ingredients

  • 2 large sweet potatoes (about 1.5 pounds)
  • 1/4 cup tahini
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and scrub the sweet potatoes, then pierce them several times with a fork. Place them on the prepared baking sheet.
  3. Bake the sweet potatoes in the preheated oven for 45-60 minutes, or until they are tender and easily pierced with a fork.
  4. While the sweet potatoes are baking, prepare the tahini sauce. In a medium bowl, whisk together the tahini, maple syrup, olive oil, soy sauce, garlic powder, salt, black pepper, and cayenne pepper (if using) until smooth and creamy.
  5. Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise.
  6. Drizzle the tahini sauce generously over the warm sweet potatoes. Garnish with chopped parsley if desired.
  7. Serve immediately and enjoy!
