Description
Sticky Tahini Butter Sweet Potatoes are a delicious and healthy treat, combining the natural sweetness of sweet potatoes with a creamy tahini sauce.
Ingredients
- 2 large sweet potatoes (about 1.5 pounds)
- 1/4 cup tahini
- 2 tablespoons maple syrup
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash and scrub the sweet potatoes, then pierce them several times with a fork. Place them on the prepared baking sheet.
- Bake the sweet potatoes in the preheated oven for 45-60 minutes, or until they are tender and easily pierced with a fork.
- While the sweet potatoes are baking, prepare the tahini sauce. In a medium bowl, whisk together the tahini, maple syrup, olive oil, soy sauce, garlic powder, salt, black pepper, and cayenne pepper (if using) until smooth and creamy.
- Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them in half lengthwise.
- Drizzle the tahini sauce generously over the warm sweet potatoes. Garnish with chopped parsley if desired.
- Serve immediately and enjoy!
Notes
- For added crunch, sprinkle some toasted sesame seeds on top before serving.
- Swap out the tahini for almond butter or peanut butter for a different flavor profile.
