Description

A delightful Sticky Toffee Apple Cake that combines the sweetness of apples with a rich caramel flavor, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in the diced apples and nuts (if using) until evenly distributed.
  7. Pour the batter into the prepared baking pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, drizzle the caramel sauce over the top of the cake before serving.

Notes

  • For a richer flavor, try adding a teaspoon of espresso powder to the batter.
  • You can substitute the apples with pears or a mix of both for a different taste.
  • For a festive touch, sprinkle some chopped pecans or walnuts on top of the caramel sauce before serving.
