Description
A delicious and easy recipe for Pad See Ew, a popular Thai stir-fried rice noodle dish.
Ingredients
- 8 ounces wide rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced bell pepper (any color)
- 1 large egg
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- Chopped green onions for garnish
- Lime wedges for serving
Instructions
- Soak the rice noodles in hot water for about 30 minutes or until softened. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the broccoli, carrots, and bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Push the vegetables to one side of the skillet. Crack the egg into the empty side and scramble it until fully cooked.
- Add the drained rice noodles to the skillet along with the soy sauce, oyster sauce, dark soy sauce, sugar, and white pepper. Toss everything together gently to combine and heat through, about 2-3 minutes.
- Remove from heat and garnish with chopped green onions. Serve with lime wedges on the side.
Notes
- For a spicier version, add sliced red chili or a dash of chili sauce while cooking.
- You can substitute the vegetables with your favorites, such as snap peas or bok choy, for a different flavor profile.
