Description

A delicious Strawberry Cheesecake topped with a rich chocolate drizzle and fresh fruit, perfect for any occasion.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil
  • Fresh fruit for garnish (such as blueberries, raspberries, or additional strawberries)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Then, fold in the sour cream until just combined.
  5. Pour the cream cheese mixture over the cooled crust in the springform pan.
  6. Bake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  8. In a small microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  9. Once the cheesecake is chilled, drizzle the melted chocolate over the top. Decorate with sliced strawberries and additional fresh fruit.
  10. Slice and serve chilled.

Notes

  • For a fruitier flavor, add a layer of strawberry puree on top of the cheesecake before drizzling with chocolate.
