Description
A delicious Strawberry Cheesecake topped with a rich chocolate drizzle and fresh fruit, perfect for any occasion.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup semi-sweet chocolate chips
- 1 tablespoon vegetable oil
- Fresh fruit for garnish (such as blueberries, raspberries, or additional strawberries)
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition. Then, fold in the sour cream until just combined.
- Pour the cream cheese mixture over the cooled crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
- In a small microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Once the cheesecake is chilled, drizzle the melted chocolate over the top. Decorate with sliced strawberries and additional fresh fruit.
- Slice and serve chilled.
Notes
- For a fruitier flavor, add a layer of strawberry puree on top of the cheesecake before drizzling with chocolate.
- Substitute the chocolate drizzle with a caramel sauce for a different flavor profile.
