Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup whipped cream
- Powdered sugar for dusting
Instructions
- In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, salt, and vanilla extract until smooth. Let the batter rest for 30 minutes to allow the gluten to relax.
- Heat a non-stick skillet over medium heat. Lightly grease the skillet with butter or cooking spray.
- Pour about 1/4 cup of the batter into the skillet, swirling it around to form a thin, even layer. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden.
- Flip the crepe and cook for an additional 1 minute. Remove from the skillet and repeat with the remaining batter, stacking the crepes on a plate.
- Once the crepes are cool, spread a layer of whipped cream on each crepe, then add a few slices of strawberries.
- Roll each crepe tightly and place seam-side down on a serving platter.
- Dust with powdered sugar before serving.
