Description
A delightful Strawberry Crunch Banana Pudding Cheesecake that combines the flavors of fresh strawberries and creamy banana pudding in a delicious cheesecake.
Ingredients
- 1 ½ cups crushed vanilla wafer cookies
- ½ cup unsalted butter, melted
- 2 (8-ounce) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 (3.4-ounce) package instant banana pudding mix
- 2 cups milk
- 2 cups sliced fresh strawberries
- 1 cup crushed strawberry cereal (like Strawberry Crunch)
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, combine crushed vanilla wafer cookies and melted butter. Mix until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form a crust.
- Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- In a separate bowl, whisk together the banana pudding mix and milk until thickened, about 2 minutes.
- Gently fold the banana pudding into the cream cheese mixture until well combined.
- Layer half of the banana pudding cheesecake mixture over the cooled crust.
- Add a layer of sliced strawberries, then top with the remaining cheesecake mixture.
- Smooth the top with a spatula.
- Sprinkle the crushed strawberry cereal evenly over the top of the cheesecake.
- Refrigerate for at least 4 hours or until set.
- To serve, carefully remove the sides of the springform pan. Slice and enjoy!
Notes
- For a chocolate twist, substitute crushed chocolate cookies for the vanilla wafers and use chocolate pudding mix.
- For added texture, mix in some chopped nuts or additional fruit between the layers.
