A delightful Strawberry Crunch Banana Pudding Cheesecake that combines the flavors of fresh strawberries and creamy banana pudding in a delicious cheesecake.


Ingredients

  • 1 ½ cups crushed vanilla wafer cookies
  • ½ cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 (3.4-ounce) package instant banana pudding mix
  • 2 cups milk
  • 2 cups sliced fresh strawberries
  • 1 cup crushed strawberry cereal (like Strawberry Crunch)

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine crushed vanilla wafer cookies and melted butter. Mix until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to form a crust.
  4. Bake for 10 minutes, then remove from the oven and let cool.
  5. In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  6. In another bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  8. In a separate bowl, whisk together the banana pudding mix and milk until thickened, about 2 minutes.
  9. Gently fold the banana pudding into the cream cheese mixture until well combined.
  10. Layer half of the banana pudding cheesecake mixture over the cooled crust.
  11. Add a layer of sliced strawberries, then top with the remaining cheesecake mixture.
  12. Smooth the top with a spatula.
  13. Sprinkle the crushed strawberry cereal evenly over the top of the cheesecake.
  14. Refrigerate for at least 4 hours or until set.
  15. To serve, carefully remove the sides of the springform pan. Slice and enjoy!

Notes

  • For a chocolate twist, substitute crushed chocolate cookies for the vanilla wafers and use chocolate pudding mix.
