Description

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 4 large eggs
  • 1 cup fresh strawberries, pureed
  • 1 cup whipped cream (for topping)
  • ½ cup crushed graham crackers (for topping)
  • ½ cup sliced fresh strawberries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, alternating with the milk. Mix until just combined.
  5. Fold in the pureed strawberries until evenly distributed throughout the batter.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  9. Once cooled, place one cake layer on a serving plate. Spread a layer of whipped cream on top, then place the second cake layer on top.
  10. Frost the top and sides of the cake with the remaining whipped cream.
  11. Sprinkle the crushed graham crackers on top of the cake and garnish with sliced fresh strawberries.
