Bite into these Strawberry Crunch Cheesecake Bites – creamy, strawberry-infused cheesecake nestled in a buttery crust, topped with a vibrant strawberry crumble. Perfect for parties, gifts, or a personal treat, these bites deliver rich flavors, delightful textures, and a touch of elegance in every bite.

Ingredients

For the Crust:

  • 1½ cups crushed graham crackers or Golden Oreos
  • ¼ cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam

For the Strawberry Crunch Topping:

  • 1 cup crushed Golden Oreos or vanilla wafer cookies
  • ½ cup freeze-dried strawberries, crushed
  • 3 tbsp melted butter

Optional for Dipping:

  • 1½ cups white chocolate or candy melts

Instructions

Prepare the Crust:

  1. Preheat your oven to 325°F (163°C). Line a mini muffin tin or an 8×8-inch baking pan with parchment paper.
  2. Combine crushed graham crackers or Golden Oreos with melted butter in a bowl. Mix until evenly combined.
  3. Press the mixture firmly into the bottom of the prepared tin or pan to form a base. Set aside.

Make the Cheesecake Filling:

  1. In a mixing bowl, beat cream cheese and sugar until smooth.
  2. Add vanilla extract, sour cream, and eggs, one at a time, mixing thoroughly after each addition.
  3. Fold in strawberry puree or jam until evenly mixed.
  4. Pour the filling over the crust, filling muffin cups ¾ full or spreading evenly in the pan.

Bake the Cheesecake:

  1. Bake for 20-25 minutes for muffin tins or 35-40 minutes for an 8×8 pan. The center should be set but slightly jiggly.
  2. Cool to room temperature, then refrigerate for at least 4 hours or overnight.

Prepare the Strawberry Crunch Topping:

  1. Mix crushed Golden Oreos, crushed freeze-dried strawberries, and melted butter in a bowl until crumbly.
  2. Remove chilled cheesecake from the pan or tin and cut into bite-sized pieces if using a larger pan.
  3. Roll or sprinkle the strawberry crunch topping over each bite, pressing gently to adhere.

Optional: Dip in White Chocolate:

  1. Melt white chocolate or candy melts in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  2. Dip each cheesecake bite into the melted chocolate as desired. Place on parchment-lined sheet and refrigerate until set.

Notes

  • Use softened cream cheese for a smoother filling.
  • Chill thoroughly to ensure the cheesecake sets properly.
  • For a vibrant topping, crush freeze-dried strawberries evenly using a food processor.
