These Strawberry Lemon Blondies are the ultimate treat—a perfect balance of buttery richness, zesty lemon, and fresh strawberry sweetness. Topped with a tangy strawberry glaze, they’re as delightful to look at as they are to eat. Ideal for summer picnics, holiday gatherings, or a cozy weekend bake, these blondies are sure to impress!

Ingredients

For the Blondies:

  • 1 cup unsalted butter, softened to room temperature
  • ¾ cup granulated sugar
  • 1 large egg
  • ¼ cup freshly squeezed lemon juice
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup fresh strawberries, diced

For the Strawberry Lemon Glaze:

  • 1 cup powdered sugar, sifted
  • 1 tablespoon fresh strawberry puree (from 2 large strawberries)
  • 1 tablespoon fresh lemon juice (or adjust for consistency)

Instructions

Step 1: Prepare the Ingredients

  1. Dice fresh strawberries into small pieces and pat them dry with a paper towel to remove excess moisture.
  2. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2: Make the Blondie Batter

  1. In a large bowl, cream together the butter and sugar with a hand or stand mixer until light and fluffy.
  2. Beat in the egg and lemon juice, ensuring the mixture is smooth.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Gently fold in the diced strawberries, being careful not to overmix.

Step 3: Bake the Blondies

  1. Spread the batter evenly into the prepared baking pan, smoothing the top with a spatula.
  2. Bake in the preheated oven for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  3. Let the blondies cool completely in the pan before adding the glaze.

Step 4: Prepare the Strawberry Lemon Glaze

  1. Blend 2 large strawberries into a smooth puree.
  2. In a small bowl, whisk together the powdered sugar, strawberry puree, and lemon juice until smooth and spreadable. Adjust the consistency by adding more powdered sugar or lemon juice as needed.

Step 5: Glaze and Slice

  1. Drizzle the glaze evenly over the cooled blondies. Let it set for about 10–15 minutes.
  2. Use the parchment paper overhang to lift the blondies out of the pan. Slice into squares and serve.

Notes

  • Freshness Tip: Use fresh, ripe strawberries for the best flavor and color.
  • Consistency Check: Make sure the strawberries are dry before adding them to the batter to avoid soggy blondies.
  • Storage: Keep the blondies in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
