Description

Strawberry Pie Enchiladas are a delightful dessert that combines the flavors of fresh strawberries and cream cheese wrapped in flour tortillas, baked to perfection and served with whipped cream.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 8 large flour tortillas
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cinnamon
  • Whipped cream, for serving

Instructions

  1. In a medium bowl, combine the sliced strawberries, granulated sugar, cornstarch, vanilla extract, and salt. Toss gently to coat the strawberries and let them sit for about 10 minutes to release their juices.
  2. Preheat the oven to 350°F.
  3. In a separate bowl, mix the softened cream cheese, powdered sugar, lemon juice, and cinnamon until smooth and creamy.
  4. Lay a tortilla flat on a clean surface. Spread a generous tablespoon of the cream cheese mixture down the center of the tortilla. Spoon a few strawberries and some of the strawberry juice on top of the cream cheese mixture.
  5. Roll the tortilla tightly around the filling and place it seam-side down in a greased 9×13 inch baking dish. Repeat with the remaining tortillas.
  6. Once all the enchiladas are in the baking dish, pour any remaining strawberry mixture over the top.
  7. Bake in the preheated oven for 20-25 minutes, or until the tortillas are lightly golden and the filling is bubbly.
  8. Allow the enchiladas to cool for a few minutes before serving. Top with whipped cream before serving.

Notes

  • For a twist, try adding a tablespoon of chopped mint to the strawberry mixture for a refreshing flavor.
  • You can also substitute blueberries or raspberries for a different berry pie enchilada experience.
