Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole milk
  • 3 large egg yolks
  • 2 tablespoons butter
  • 1/2 teaspoon cinnamon (optional)
  • 1 cup whipped cream (for topping)

Instructions

  1. In a medium saucepan, combine the sliced strawberries and chopped rhubarb. Add 1/2 cup of the sugar and let it sit for about 10 minutes to release the juices.
  2. After 10 minutes, place the saucepan over medium heat and cook until the mixture starts to bubble, stirring occasionally.
  3. In a separate bowl, whisk together the cornstarch, remaining 1/2 cup of sugar, salt, and cinnamon (if using).
  4. Gradually add the cornstarch mixture to the bubbling fruit, stirring constantly until it thickens, about 2-3 minutes. Remove from heat and stir in the vanilla extract.
  5. In another bowl, whisk together the milk and egg yolks until well combined. Slowly pour this mixture into the fruit mixture, stirring continuously.
  6. Return the saucepan to low heat and cook for an additional 5 minutes, stirring constantly until the pudding is thick and creamy.
  7. Remove from heat and stir in the butter until melted and fully incorporated.
  8. Pour the pudding into individual serving dishes or a large bowl. Let it cool to room temperature, then refrigerate for at least 2 hours to set.
  9. Serve chilled, topped with whipped cream.
