Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/2 cups whole milk
- 3 large egg yolks
- 2 tablespoons butter
- 1/2 teaspoon cinnamon (optional)
- 1 cup whipped cream (for topping)
Instructions
- In a medium saucepan, combine the sliced strawberries and chopped rhubarb. Add 1/2 cup of the sugar and let it sit for about 10 minutes to release the juices.
- After 10 minutes, place the saucepan over medium heat and cook until the mixture starts to bubble, stirring occasionally.
- In a separate bowl, whisk together the cornstarch, remaining 1/2 cup of sugar, salt, and cinnamon (if using).
- Gradually add the cornstarch mixture to the bubbling fruit, stirring constantly until it thickens, about 2-3 minutes. Remove from heat and stir in the vanilla extract.
- In another bowl, whisk together the milk and egg yolks until well combined. Slowly pour this mixture into the fruit mixture, stirring continuously.
- Return the saucepan to low heat and cook for an additional 5 minutes, stirring constantly until the pudding is thick and creamy.
- Remove from heat and stir in the butter until melted and fully incorporated.
- Pour the pudding into individual serving dishes or a large bowl. Let it cool to room temperature, then refrigerate for at least 2 hours to set.
- Serve chilled, topped with whipped cream.
