Description

A delicious blend of strawberry shortcake and cheesecake, perfect for dessert lovers.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. Bake for 10 minutes, then remove from the oven and let cool.
  5. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
  6. Add the vanilla extract and mix well.
  7. Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.
  8. Stir in the sour cream until smooth.
  9. Pour the cream cheese mixture over the cooled crust in the springform pan.
  10. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  11. Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour.
  12. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  13. Before serving, whip the heavy cream with powdered sugar until soft peaks form.
  14. Spread or pipe the whipped cream over the top of the chilled cheesecake.
  15. Arrange the sliced strawberries on top of the whipped cream.
