Ingredients
- 2 cups fresh corn kernels (about 3 ears of corn)
- 1 medium cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped (optional)
- 1/4 cup crumbled feta cheese (optional)
Instructions
- In a large bowl, combine the fresh corn kernels, diced cucumber, cherry tomatoes, and red onion.
- In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the corn and vegetable mixture, and gently toss to combine until everything is evenly coated.
- If using, fold in the chopped cilantro and crumbled feta cheese.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, garnished with additional cilantro or feta if desired.
